Fermented Milk Products From All Over the World • Urubu (Burundi)


Urubu is a traditional fermented milk product in Burundi, obtained through the spontaneous fermentation of fresh, raw cow’s milk. With a relatively solid consistency, smooth texture, white colour, and pleasant taste, urubu is much appreciated across the country. People in Burundi simply place fresh milk into earthenware pots or other suitable containers and allow the milk to ferment naturally at room temperature. Depending on the temperature of the area where the milk is left to rest, urubu takes anywhere from 1 day to 3 days to be ready for consumption. When it comes to the content of bacteria in urubu, it is hard to determine the particular cultures that are used in the making process, as it is something that happens spontaneously and is influenced by environmental factors.
