Translated in “buttermilk”, kislo mleko is a type of sour milk that is obtained due to the bacterial fermentation of milk. Due to the fact that milk is very important in the cuisine of the Balkans, this product is very popular in the country, being consumed not just as it is, but also as an ingredient in a variety of dishes. To make kislo mleko, whole milk is used to which a form of acid is added, such as lemon juice or vinegar. The milk doesn’t have to be heated before adding the acid, so it is a very straightforward process. After the acid has been added to the milk, it is stirred well and allowed to sit at room temperature for just 15 minutes. The acid will make the milk to start curdling and all you have to do before using kislo mleko is to stir it well once more so that it has a homogenous consistency.
